Zoodles - Zucchini Noodles

Zoodles, or simply zucchini noodles, are the perfect choice for a gluten-free or keto diet, or someone looking to consume more vegetables! Learn how to make this dish without the use of a spiralizer.

Ingredients
  

  • 2 zucchinis sliced into matchsticks
  • 1 tbsp extra virgin olive oil
  • ¼ tsp salt
  • black pepper

Instructions
 

  • Slice your zucchini into matchsticks. This can be done easily with a mandolin slicer. If one is not available to you, matchsticks can also be made using a knife.
  • In a medium skillet over medium-high heat, add the olive oil. Once the oil is hot, and moves easily in the pan, add the sliced zucchini. Add salt and pepper to taste. Remove the zucchini from the pan once it begins to brown, has a slight crunch, but is not mushy. This will take about two minutes. Serve as a side dish tossed with your preferred pasta sauce, or as a bed for a filet of the protein of your choice (fish, chicken, tofu, etc.).
