Ingredients
- 1 sweet potato
- 2 tbsp olive oil
- ¼ tsp salt
- ¼ tsp pepper
- 1 tbsp rosemary minced

Instructions
- Cut the root ends off the sweet potato. Microwave the sweet potato whole for 2 minutes. This time will vary depending on the size of your sweet potato and power of your microwave. Poke the potato with a fork. The fork should slide into the potato with a little pressure. The potato should not be mushy. Slice the cooked potato into ½" rounds.

Cook for 5 minutes and then flip potatoes on to their other side. Cook for 3 minutes. The potatoes should be golden brown on each side. Sprinkle with salt and pepper. Turn the flame to low.
