Sweet Potatoes with Rosemary and Garlic

Ingredients
  

  • 1 sweet potato
  • 2 tbsp olive oil
  • ¼ tsp salt
  • ¼ tsp pepper
  • 1 tbsp rosemary minced
  • 1 tbsp garlic minced

Instructions
 

  • Cut the root ends off the sweet potato. Microwave the sweet potato whole for 2 minutes. This time will vary depending on the size of your sweet potato and power of your microwave. Poke the potato with a fork. The fork should slide into the potato with a little pressure. The potato should not be mushy. Slice the cooked potato into ½" rounds.
  • To a hot sauté pan, add the olive oil. Place the sweet potato rounds into the pan. They should all be flush against the pan, with no potatoes overlapping. Cook for 5 minutes and then flip potatoes on to their other side. Cook for 3 minutes. The potatoes should be golden brown on each side. Sprinkle with salt and pepper. Turn the flame to low. Add in the rosemary and garlic and cook for 2 minutes. Serve and enjoy!
