Seared tuna with purée of sweet potatoes (Atum com purê de batata doce)

Ingredients

  • 6 oz Ahi (sushi grade tuna)
  • 8 oz sweet potato
  • 3 tbsp whipping cream
  • 1 tbsp melted butter
  • 1/4 tsp vinegar (or lemon juice)
  • 1/4 tsp turmeric powder (optional)
  • 1/2 tsp white sesame seeds
  • 1/2 tsp black sesame seeds
  • 1 tsp Olive oil
  • salt, pepper to taste. top with chives or green onions

Instructions

  • Sprinkle the tuna with salt- set aside, then cook the sweet potato until soft. Then peel it and cut it into 1 inch chunks
  • Put the sweet potato in a food processor. Add melted butter, salt, vinegar, white pepper (optional turmeric powder)
  • Purée the sweet potato and add about a 1/4 cup of cream
  • Rub a little olive oil on the tuna then coat the tuna with sesame seeds
  • Sear the tuna in a preheated pan over high heat . For about a minute on each side.
  • Put the puréed sweet potato on a plate and placed the sliced tuna on top
