Seared tuna with purée of sweet potatoes (Atum com purê de batata doce)
Ingredients
- 6 oz Ahi (sushi grade tuna)
- 8 oz sweet potato
- 3 tbsp whipping cream
- 1 tbsp melted butter
- 1/4 tsp vinegar (or lemon juice)
- 1/4 tsp turmeric powder (optional)
- 1/2 tsp white sesame seeds
- 1/2 tsp black sesame seeds
- 1 tsp Olive oil
- salt, pepper to taste. top with chives or green onions
Instructions
- Sprinkle the tuna with salt- set aside, then cook the sweet potato until soft. Then peel it and cut it into 1 inch chunks
- Put the sweet potato in a food processor. Add melted butter, salt, vinegar, white pepper (optional turmeric powder)
- Purée the sweet potato and add about a 1/4 cup of cream
- Rub a little olive oil on the tuna then coat the tuna with sesame seeds
- Sear the tuna in a preheated pan over high heat . For about a minute on each side.
- Put the puréed sweet potato on a plate and placed the sliced tuna on top
