Italian Fusion Quesadilla

Quesadillas can be filled with whatever your heart desires, or whatever is in you fridge! Try out this Italian style quesadilla stuffed with basil, tomato coulis, pancetta, and fresh Asiago cheese.
Ingredients
- 2 oz pancetta
- ¼ cup roasted bell peppers
- 1 tbsp tomato coulis
- 1 tsp extra virgin olive oil
- salt to taste
- 2 tortillas
- 2 oz fresh Asiago roughly chopped
- 2 tbsp basil
- black pepper to taste
Instructions
- Sauté pancetta until brown over a medium-low heat. Add in roasted bell peppers. Cook for about 10 minutes. Add tomato coulis. Turn off heat.
- In a warm pan add extra virgin olive oil and salt. Add in tortilla. Top with fresh Asiago cheese and basil. Once the cheese is melted add the pancetta mixture. Once the tortilla begins to brown, add a second tortilla on top and flip. Cook for about 2 minutes.
