Ingredients

Cornmeal Pancakes with Bananas and Hazelnuts

  • ¾ cup pancake mix
  • ¼ cup corn meal
  • 1 banana sliced
  • 2 tbsp hazelnuts roughly chopped
  • 1 tbsp butter
  • maple syrup

Peanut Butter Bacon Pancakes

  • 1 cup pancake mix
  • 2 tbsp peanut butter
  • 4 slices bacon cooked
  • maple syrup warmed

Fluffy Meringue Pancake with Blackberries

  • 1 cup pancake mix
  • 1 egg white whipped to stiff peaks
  • ¼ tsp lemon juice/cream of tartar/vinegar
  • 1 tbsp butter
  • ¼ cup blackberries
  • maple syrup

Instructions

Cornmeal Pancakes with Bananas and Hazelnuts

  • To create the pancake batter use 75%, ¾ cups, pancake mix and 25%, ¼ cup, cornmeal. Add remaining ingredients that the pancake mix calls for. Let sit for about 10 minutes to allow cornmeal to hydrate.
  • To a non-stick pan toast the hazelnuts in butter until golden, about 5 minutes. Add a little more butter and sliced bananas. Toss to coat. Turn off heat.
  • With a non-stick pan on a medium flame melt butter. Cook pancakes. Once you flip the pancakes to the second side, add the syrup to the pan with the bananas until the syrup is warm.
  • To plate your pancakes, spoon the banana, hazelnut, syrup mixture over the top

Peanut Butter Bacon Pancakes

  • Cook pancakes according the package instructions.
  • In the microwave, heat peanut butter for 30-60 seconds until softened.
  • To the top of each pancake add a layer of peanut butter, a slice or two of bacon, and warm maple syrup.

Fluffy Meringue Pancakes with Blackberries

  • For every 1 cup of dry pancake mix add in 1 whipped egg white and lemon juice. Fold the whipped egg white into the pancake batter, just until combined. Do not over mix the batter. Cook pancakes.
  • In a separate small pan add in butter and blackberries. When berries are warm add in maple syrup. Drizzle on top of pancakes.
