Ingredients
Gnocchi with Sun-Dried Tomato Pesto Cream Sauce
- ¼ cup mushrooms
- 1 tsp butter
- 1 cup heavy whipping cream
- 2 tbsp sun-dried tomato pesto
- salt
- 1 lb gnocchi
Accordion Pasta with Blistered Tomatoes and Sun-Dried Tomato Pesto
- 1 tbsp olive oil
- 1 cup grape/cherry tomatoes
- 1 tbsp sun-dried tomato pesto
- parsley for garnish
- chives for garnish
- fisarmoniche pasta noodles
- parmesan for garnish
Casarecce with Toasted Almonds and Sun-Dried Tomato Pesto
- 1 tbsp butter
- 1 tbsp almonds roughly chopped
- casarecce noodles
- 1 tbsp sun-dried tomato pesto
- parsley for garnish
- asiago cheese for garnish
Instructions
Gnocchi with Sun-Dried Tomato Pesto Cream Sauce
- Sauté mushrooms in a medium-hot pan with a teaspoon of butter. Season with salt and pepper to taste.
- In a medium sauté pan over medium heat, add a cup of cream. Season with salt. Once the cream has thickened turn off heat. Add sun-dried tomato pesto and sautéed mushrooms
- Boil gnocchi according to package instructions. Strain the gnocchi and transfer directly into the cream sauce.
Accordion Pasta with Blistered Tomatoes and Sun-Dried Tomato Pesto
- Blister your tomatoes by sautéing them over medium-low heat with olive oil for 15 minutes. Season with salt and pepper. Transfer to a bowl and set aside.
- Deglaze the pan used to cook the tomatoes with a little water. Scrape the bottom of the pan. Into that pan add the sun-dried tomato pesto. Stir. Turn off heat and sprinkle with parsley and chives.
- Cook pasta according to package instructions. Strain directly into the pasta sauce. Mix in the blistered tomatoes. Sprinkle with parmesan cheese.
Casarecce with Toasted Almonds and Sun-Dried Tomato Pesto
- Toast almonds over low heat in butter. Once the nuts and butter begin to brown turn off the heat.
- Cook pasta according to package instructions.
- Add sun-dried tomato pesto into the toasted almonds. Strain pasta directly into the sauce. Garnish with parsley and asiago cheese.
