
Ginjinha (Ginja) Portuguese, Sour Cherry Liqueur
When we think of Portugal, we envision a land steeped in history and tradition, with each region boasting its own unique charm. Among the many gems this beautiful country has to offer, one truly iconic drink stands out - Ginjinha. This historical brand drink, made from sour cherries, has been a symbol of Portuguese culture for centuries.
Equipment
- Half gallon glass jar or a few mason jars that have the total capacity of about 64 ounces
Ingredients
- 4 cups sour cherries with the seeds
- 4 cups brandy or rum
- 1 cup red wine
- 3 cups sugar brown or granulated, white sugar, or a combination of both
- 4 cinnamon sticks
- 4 cloves
Instructions
- In a pot, add the red wine and sugar. Warm the mixture and stir to dissolve the sugar. You do not have to bring it to a boil..
- in a large jar, add the cherries, Brandy, red wine, sugar mixture, and spices
- put the jar in a cool area and allow too steep for at least three months Anas much is a full year.
- Taste the mixture. If you think it's too sweet, you could add more alcohol and one or 2 teaspoons of lemon juice.
- Strain the mixture through a sieve or cheesecloth into hey bottle. What about 20 or 30 cherries in each bottle as a garnish and to serve with the ginjinha.
