Apricot Barbecue Sauce

This Apricot Barbecue Sauce is a a great finishing sauce for coating barbecued chicken or smoked brisket!

Ingredients
  

  • 8 oz dried apricots
  • 1 tsp thyme
  • ¼ tsp allspice
  • 1 tsp garlic minced
  • ½ cup onion diced
  • 2 tsp mustard
  • ¼ tsp cayenne
  • tsp salt
  • ¼ cup apple cider vinegar
  • ¼ cup extra virgin olive oil
  • 5 oz apple juice
  • oz apricot jam

Instructions
 

  • To a food processor, add dried apricots, thyme, allspice and garlic. Pulse. Add in onions. Pulse. Add in mustard, cayenne, salt, apple cider vinegar and olive oil. Pulse. Add in apple juice and apricot jam. Pulse to combine. Taste and adjust flavors to your liking. Best after sitting for 24 hours to allow flavors to merry.
