Picado is an appetizer served with toothpicks popular in Madeira Island, Portugal. Make these steak bites, or steak tips, in a wine cream sauce and enjoy at your next gathering with friends!
1lbsteak, top sirloincut into ½" cubes
1yellow onionroughly chopped
piri piri (hot sauce)to taste
2tspwhite wine vinegar
¼tspbeef bullion powder
½cupheavy whipping cream
Season the beef with salt. Set aside.
In a hot pan, add oil and saute the mushrooms. Only add salt to the mushrooms once they have browned. Adding salt too early would create more steam and make it more difficult for the mushrooms to brown. Once the mushrooms are browned and salted deglaze the pan with 2 tablespoons of white wine.
In a second hot pan, saute the onions in oil for about 10 minutes or until golden brown. Once they have browned and salt has been added deglaze the pan with about 2 tablespoons of white wine. Combine the cooked mushrooms and cooked onions into 1 pan. Remove from the heat and set aside.
In the empty pan, while still hot, add oil. Add the seasoned meat and cook until browned on all sides. Once all sides are brown turn down the heat and add in the garlic and bay leaf. Add the mushrooms and onions into the pan. Add in the tomato sauce and remaining white wine. Add in piri-piri sauce, or hot sauce of your choice. Add in black pepper to taste. Add in beef bullion powder and white wine vinegar. Add in the heavy whipping cream and simmer for 10 minutes. Lastly add in the black olives.
